Ingredients:
Flour Tortillas:
To kick off the Southwestern eggroll magic, I began with flour tortillas. These soft, pliable wraps would serve as the canvas for our flavorful filling. Opt for large tortillas, as they'll be easier to roll and will hold the generous filling.
Black Beans:
Black beans bring a hearty, earthy quality to the filling, adding both texture and a dose of plant-based protein.
Corn:
Sweet corn kernels add bursts of freshness and natural sweetness to balance the savory components.
Red Bell Peppers:
Sliced red bell peppers infuse vibrant color, a hint of sweetness, and a slight crunch.

Monterey Jack Cheese:

Dipping Sauce Ingredients:
1/2 cup cream, 1/2 cupmayo, 1 tbsp chopped garlic, 2 tbsp lime juice
Prepare the Filling:
In a mixing bowl, combine the diced chicken, black beans, corn, red bell peppers, chopped greens, and shredded Monterey Jack cheese. Sprinkle in the cumin, chili powder, garlic powder, and paprika. Toss to evenly distribute the flavors.
Assemble the Eggrolls:
Lay out a flour tortilla and spoon a generous portion of the filling onto the center. Fold in the sides and roll up tightly, sealing the edges with a bit of water.
Fry to Perfection:
Heat the frying oil to 350°F (175°C). Carefully fry the eggrolls until golden brown and crispy, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
Prepare the Dipping Sauce:
In a small bowl, combine everything until all the ingredients blend well together.
