The Challenge: Introducing Eggplants to a Picky Eater




Eggplants, with their unique texture and flavor, can be a challenging vegetable for some kids to embrace. My daughter was no exception; she was quite resistant to the idea of eating eggplants in any form. However, I was determined to introduce this nutritious vegetable into her diet in a way that she would enjoy.


The Solution: Eggplant Patties

After a bit of culinary experimentation, I discovered the magic of Eggplant Patties. These golden-brown, crispy delights quickly became a favorite in our household, especially for my daughter. The transformation was incredible—eggplants went from being a source of culinary hesitation to an eagerly anticipated school lunch.


Ingredients:

2 medium-sized eggplants

1/2 cup breadcrumbs

1 egg

1/4 cup finely chopped onions

1/2 cup chopped boiled potations 

Salt and pepper to taste

1/2 tsp chicken powder

2 tbsp cornstarch

Cooking oil for frying


Instructions:


1. Prep the Eggplants:

Start by washing, and boiling the eggplant until soft and peeling. Cut them into small cubes, and then steam or mash. This usually takes about 10-15 minutes.

2. Add Flavor and Texture:

To the mashed eggplants, add the breadcrumbs, finely chopped onions, seasonings, cornstarch, and the egg. Mix everything together until it forms a well-combined mixture.

4. Shape the Patties:

With your hands, shape the mixture into patties or small discs. You can make them as large or as small as you prefer.

5. Fry Until Golden Brown:

Heat cooking oil in a pan over medium-high heat. When the oil is hot, carefully add the eggplant patties and fry them until they are golden brown and crispy on both sides. This typically takes about 3-4 minutes per side.

6. Serve and Enjoy:

Once the patties are cooked to perfection, remove them from the pan and place them on paper towels to remove excess oil. Serve them warm with your child's favorite dipping sauce, like ketchup or a yogurt-based dip.
