But what if I told you that you could make this classic dish with minimal effort, all thanks to a trusty kitchen companion – the food processor? Effortless Creamy Mashed Potatoes

6 medium sized potatoes, cubed (I always include the skin because I don't want to waste the added fiber and nutrients my kids and I can get with it, but you can peel if you prefer a very smooth texture)
2 tablespoons of butter
1/2 cup all purpose cream
Salt and pepper to taste
Preparation: Begin by cubing the potatoes, soak for about 30 mins to remove the starch, then boil for 10 minutes until soft.
Processing with Ease: Once the potatoes are cooked, drain them thoroughly and transfer them to the food processor. Add the butter, cream, a pinch of salt, and a dash of pepper to the processor bowl.

Creamy Magic: Pulse the mixture in the food processor until the potatoes and butter are well combined and the mixture is smooth. You might need to scrape down the sides of the processor bowl a couple of times to ensure an even consistency.
Final Touches: Taste and adjust the seasoning with salt and pepper. Give the mixture a final pulse to ensure everything is well incorporated.
Serve and Enjoy: Your creamy mashed potatoes are now ready to be served. Pair them with the mouthwatering mushroom gravy for a complete culinary experience.
Savory Mushroom Gravy
1 stick of butter
4 tbsp of all-purpose flour
1 can of mushrooms, sliced
3 cups of water
1 beef cube (or vegetable cube for a vegetarian option)
1 tablespoon of Worcestershire sauce
Salt and pepper to taste
Sautéing the Mushrooms: In a pan, melt the butter over medium heat. Add the sliced mushrooms and sauté until they are golden brown and tender. Set aside.
Creating a Roux: In the same pan, add the flour to the remaining butter and cook for a few minutes until it turns a light golden color. This creates the base for your gravy.
Building Flavors: Gradually add the water while continuously whisking to prevent lumps. Drop in the beef cube (or vegetable cube) and Worcestershire sauce. Stir the mixture until the cube is dissolved and the gravy starts to thicken.
Incorporating Mushrooms: Stir in the sautéed mushrooms, and let the gravy simmer for a few minutes. This allows the flavors to meld together.
Perfecting the Seasoning: Taste the gravy and season with salt and pepper as needed. Remember that the beef cube already contains salt, so adjust accordingly.
