Crab and corn soup is a classic dish that is beloved for its comforting flavors and texture. While traditional recipes call for fresh crab meat, you can still enjoy this delectable soup using imitation crab.
Crab and Corn Soup Ingredients:
Imitation Crab Sticks
1 can corn kernels
6 cups chicken or vegetable broth
Salt and pepper to taste
Slurry ( 5 tbsp cornstarch mixed with 5 tbsp water)
Thaw the imitation crab meat if using frozen. If the crab sticks are large, shred or chop them into bite-sized pieces.
In a large soup pot, boil the broth. Add the corn and imitation crab sticks.
Simmer for 5 mins, then thicken with the slurry. Slowly add the eggs while mixing to let it flower.
Serve and Garnish with green onions if you have.
