Ingredients:

To create a mouthwatering hot and sour soup, gather the following ingredients:

6 cups of chicken or vegetable broth (I used 6 cups of water with 1 chicken bouillon)
4-5 dried shiitake mushrooms, soaked in water and thinly sliced
1/2 cup of enoki mushrooms
1/2 cup of tofu, cubed
1/2 cup Black Wood Ear Mushroom
2 tablespoons of soy sauce
2 tablespoons of white vinegar
chopped carrots and bell peppers
1/2 tablespoon of chili flakes (adjust according to your heat preference)
5 tablespoons of cornstarch, dissolved in water
2 large eggs, lightly beaten
1 teaspoon of sesame oil
Salt and pepper to taste
Chopped green onions and cilantro for garnish



Preparation Steps:

In a large pot, bring the water to a gentle boil.
Add the soaked and sliced shiitake mushrooms, enoki, black wood ear mushrooms, and tofu to the boiling broth. Add the vegetables. Let them simmer for about 5 minutes until they soften.
Stir in the soy sauce, and chili sauce. Adjust the amount of chili sauce according to your desired level of spiciness.
Dissolve cornstarch in water to create a slurry and add it to the soup, stirring well. This will help thicken the soup slightly.
Slowly drizzle the beaten eggs into the soup while stirring gently. This will create beautiful egg ribbons in the soup.
Season with salt and pepper to taste. Remember, the soup should have a balance of heat and tanginess.
Finish off by adding a teaspoon of sesame oil and 2 tbsp of white vinegar to enhance the flavors.
Ladle the hot and sour soup into serving bowls and garnish with chopped green onions.



Tips for a Perfect Hot and Sour Soup:

For a vegetarian version, simply omit the chicken and use vegetable broth instead.
Adjust the level of spiciness by adding more or less chili sauce, according to your preference.
Soaking the dried shiitake mushrooms in warm water for about 20 minutes will soften them before slicing.
Freshly squeezed lime or lemon juice can be substituted for rice vinegar if desired.
Use firm tofu for a better texture in the soup. You can also try marinating the tofu in soy sauce and sesame oil for added flavor.
Don't overcook the soup to maintain the vibrant colors and texture of the ingredients.
Serve the hot and sour soup as a starter or pair it with steamed rice.
